The subject of the invention is a method for processing juices obtained from fruits of plants belonging to the Rosaceae family, subfamily Amygdaloideae, using a high-throughput plasma system that utilises impulse discharge (ID) as a plasma source. An additional advantage of the invention is the production of functional juices obtained from fruits of plants of the Rosaceae family according to a protected method with specific physicochemical, nutritional and microbiological properties. The invention also relates to a high-throughput plasma system for implementing this method.
The aim of the research on the invention was to develop a method for processing fruit juices and to obtain functional fruit juices characterised by a stable sugar content (unchanged or minimally reduced content).
